A lovely semi-hard cheese from León, in which the milk is infused with a small-batch I.P.A from the same region. This goes on to develop aromas of peach and mango, adding a lovely sweetness to the cheese, due to the combination of milk and malts.
Light acidity and some herbaceous and floral notes, caused by hops infusion. Matured in natural underground wine cellars which intensify the yeasty and mouldy aromas in the rind. Also the rind is rubbed with olive oil and cocoa.
