This small production cheese produced by Airas Moniz (producers of Savel, awarded Spain's Best Blue Cheese 2019) enjoys a rich, buttery flavour. Rich yellow in colour and intense flavour. It has a semi-soft texture with an edible rind and goes well with dried fruits and quince.
