Xeo (Meaning 'ice' in Galician) is inspired by the Ice wines (Vinos de Hielo), by freezing the grapes to concentrate sugars by dehydration. The sugars and other dissolved solids do not freeze but the water does, allowing for a more concentrated grape juice to develop. The grape's mosto is then pressed from the frozen grapes, resulting in a smaller amount of more concentrated dessert wine.
Moderate sweetness contrasted with a rich acidity that makes it fresh and easy. The Garnacha Tintorera gives it it's fruitiness and the Godello add structure.
