Born from ultra-low-yield vines producing just 800g per plant, this wine is a study in precision. To preserve peak freshness, grapes are harvested at dawn and kept at a constant 8°C.
Following a rigorous double selection in the field and cellar, the fruit undergoes an extended 20–30 day fermentation with manual punch-downs for deep, gentle extraction. The wine is then aged for 14–15 months in seasoned barrels, with seven rackings performed in harmony with the waning moon to ensure natural clarity and character.
Intensity & Depth Aged for over three years, this wine commands attention with its deep, intense beet-red hue. The nose is powerfully aromatic, bursting with dark forest fruits—blackberry, currant, and blueberry—layered with a sophisticated balsamic finish and the distinct mineral signature of its sandstone soils. On the palate, it is a masterclass in contrast: powerful yet velvety. It glides across the tongue with a silky texture, leaving behind an evolving trail of earthy nuances and sweet, lingering notes.
