To avoid oxidation, a maceration is carried out pre-fermentation with dry ice for approx 48 hours. Long fermentation. Aged 4 months in hardwood barrels on lees and 8 months in the cellar.

Clean, bright, elegant. On the nose, peach skin, ripe orange, jasmine and grapefuit. Has a slight touch of wood and balsamic. Buttery finish.
