This wine undergoes a slow fermentation until its sugars are gone. It stays on lees for 7 months in Amontillado barrels (botas).
Straw yellow color, with citrus notes, kumquat, orange blossom, hints of bergamot and fruit, predominantly tropical fruits such as passion fruit and papaya. The palate is citric with bitter notes of blood orange, lemon peel, green pineapple and a slight bitterness that provides a long presence.
With time in the glass the notes of tropical fruit and white flower are accentuated.
