The 'Royal' variety of olive is quite unique in that it only grows in the Cazorla mountains,
(**P.D.O. Sierra de Cazorla). More than double the amount of olives are needed for the same yield and this variety is considered the 'queen' of olives; smooth, intense with a fruity flavour. It is bitter on the tongue and slightly spicy in its aftertaste. Hand-harvested in October over three days. All indications of a quality oil, full of polyphenols, the olive’s natural antioxidant and an acidity of 0.18.

 

So expect an intensive olive oil, green of color, full of flavour with a thick consistency.
